Domaine Ciringa, Fosilini Breg Sauvignon Blanc 2020

Domaine Ciringa was founded in 2005 by the Tements, a family of talented Slovenian winemakers. Located just across the border from Austria, Domaine Ciringa focuses on making pure and super mineral Sauvignon Blanc which grows on ancient fossilised coral and limestone soils. Fosilini Breg Sauvignon Blanc 2020 is taken from their most prestigious single vineyard, Zieregg. Located on Fosilini Breg (Coral Mountain), the Zieregg vineyard is rich in limestone and coralline soils which makes for naturally mineral wines. It was then aged in oak for 6-months to enhance it's richness, mellow out the acidity a little and give greater complexity. Add to that flavours of apple, clementine and pear; plus a bright, refreshing palate with a nice zesty finish and you have a supremely drinkable Sauvignon Blanc; a Pouilly-Fume in disguise!
